Although our all-natural on-GMO mint obsession is usually 100% satisfied by our old pal, Peppermint, every once in a while you just need a shot of chocolate. So off we went, hunting for the perfect (aka yummy AND healthy) vegan mint chocolate recipe.
And hallelujah, we found it! These No-Bake Mint Chocolate Protein Bars are quick, easy, and contain only seven ingredients – all of which are VerMints-approved*. That means refined sugar-free, vegan, all-natural, and chock-full of flavor. They’re perfect for a healthy dessert or a pre-workout snack. In fact, the only thing they’re not good for is sharing (better make a double batch).

*The Healthy Maven’s version of the recipe calls for nuts. If you’re nut-free, like us, swap ‘em out for dried fruit, chia seeds, hemp seeds, or nut-free granola for a little extra crunch. Be sure to replace the entire cup of nuts and use soy milk instead of almond milk to moisten your batter. If your diet allows it, a tablespoon of coconut oil is also a delicious touch.
